European Hake (Merluccius merluccius) from the Cantabrian Sea (Bay of Biscay) is also known as the "Queen of the Sea." Practicing sustainability, the hake is line-caught using small inshore Spanish boats in the Cantabrian Sea.
The best select cuts are obtained directly from the local fish markets of Celeiro in Lugo and Pasaia in Guipúzcoa. Then, the hake is brought to the workshop, where a low-temperature cooking technique retains the fish's organoleptic properties to guarantee a succulent delicacy.
