Montaraz ÚNICO Jamón de Bellota Pata Negra is the best Spanish ham in the USA.

Since the start of the family business in 1890, Montaraz has maintained the traditional production process, respecting century-old salting and curing processes in natural drying sheds. Salt and patience have always been their only preservation secrets. The serenity of the process has been inherited from the past, and ancestral expertise has been handed down from father to son for five generations of master ham makers. 

Each Montaraz product comes from the finest 100% Ibérico breed pigs. During their eighteen months of growth, they have the privilege of being raised and roaming free over two acres of exceptional pastures in Extremadura, one of the world’s most significant extensions of centuries-old oak trees. Select 100% Ibérico breed pigs feed naturally on a Bellota (acorns) diet during the Montanera season or fattening process, between October and January, when the acorns naturally fall from the oak trees. The curing process for their hams and shoulders takes at least four years in Salamanca and Olivenza.

As a result, they have two distinct ‘types’ of Montaraz. The milder climate of Salamanca yields delicately flavored hams and paletillas, while the higher temperatures in Extremadura produce a more robust final product. Regardless of the origin, both regions have exceptional, 100% natural pieces, with only two ingredients enhancing the meat: salt and time. Their commitment to quality means no nitrites or allergens are used.

Keep refrigerated. We recommend opening the tray 30 to 60 minutes before serving and consuming the ham at room temperature (68 to 72 °F / 20 to 22 °C) to enjoy the subtlety of its flavors and aromatic qualities fully. Transfer the jamón to your plate and/or a cheese and charcuterie board for an elevated look.
